Ice cream cone cupcakes

These are a fantastic bake to do with the kids, they will love to decorate the finished cone. Lola helped bake these and decorated them all and I have to admit, when I sampled my first (yes, I had more than one ?) I found myself licking the edge of the cone to stop the ice cream from dripping! That’s how realistic they were.

We actually made 12 but I recommend doing 14 with this amount of cake batter as some of our cones were slightly over filled and spilled over the top.

Ingredients:

  • 14 Ice cream cones (flat bottom)
  • 170g caster sugar
  • 170g softened butter
  • 170g SR flour
  • 3 eggs
  • Level tsp baking powder
  • 1tsp vanilla essence
  • Food colouring (optional)

Topping:

  • 85g softened butter
  • 175g icing sugar
  • 5 tbsps fresh double or whipping cream
  • Chocolate flakes/twirls
  • cake sprinkles
  • 50g melted milk chocolate (optional)
  • food colouring (optional)

Method:

Preheat the oven to 180°/FAN 160°/GAS 4

Cream the butter and sugar together until light & fluffy.

Lightly beat the eggs and add a little at a time. Add the flour and baking powder and make sure it’s well mixed.

At this stage we divided the mixture into three and added vanilla essence to one third, tsp of cocoa to another third and lilac food colouring to the final third. This is optional, you can do whatever you prefer.

Then spoon the mixture evenly into cones and place them in a bun tray.

Bake them on the middle shelf for 20 mins or until they are springy to the touch. When cooked leave until completely cooled before topping.

Cream the softened butter and icing sugar until light and fluffy before you add the fresh cream.

Whisk until quite stiff so it doesn’t drop off the beaters.

At this point we again divided the mixture into three. We added melted chocolate to one third and whisked it up, lilac colouring to another third and left the last third as it was.

You can use a piping bag to put the cream on the cone cakes or just spoon it on like we did as it was less messier.

Then poke in half a flake / twirl and add as many sprinkles as you like ??

  1. OMG .. They are amazing Lola’s presentation is lovely .. We will call this the English Version of the Ice Cream Cone Cupcakes.
