Chocolate meringue bites

Ingredients:

  • 3 x large egg whites
  • 150g caster sugar
  • 1tsp vanilla extract
  • 150g chocolate
  • Food colour
  • A variety of sprinkles

Method:

Preheat the oven to 110ºC  and line two large baking trays with greeseproof paper. In a large bowl, whisk the egg whites until very stiff and whisk in half of the sugar. Gently fold in the remaining sugar along with the Vanilla Extract.

Equally divide the mixture between three bowls and add a few drops of one of food Colouring to each bowl of mixture.

Working on one colour mixture at a time, Spoon it into a piping bag fitted with a plain nozzle and squeeze little mounds on the prepared baking trays.

Repeat with the other mixtures to make approximately 30 mini meringues.

Bake in the oven for approximately  one hour until the meringues are crisp on the outside, but not browned. Then remove from the oven and cool on the baking trays.

To decorate, melt the chocolate either in the microwave or in a bowl standing in a pan of boiling water.

Put the sprinkles into different bowls and dip the bottom of the meringue into the choco and then into the sprinkles of your choice. Place the meringue back on to the lined baking tray to set then put aside in a cool place for about 30 minutes, they will be crisp on the outside but nice and chewy on the inside …… then eat them 🙂
