Vegetable soup
I never understand why people buy canned soup, it’s the easiest thing in the world to make. It’s literally as easy as boiling vegetables! And best of all you know exactly was is in it. It tastes so much nicer too.
Recipe:
- Any vegetables (well, not sprouts obviously)
I used, carrots, swede, potatoes, celery, onion, garlic, a leek and some parsnips. It was literally what was left over in my vegetables rack.
- 2 pints of Vegetable stock
I used 2pints of water and 2 vegetable & 2 chicken stock cubes.
- 25g butter
- Salt & pepper to your taste
- Chilli spice (optional)
- Tomato puree (a big dollop)
Method:
Peel wash and chop all of the vegetables.
Melt the butter in the pan on a medium heat and add all of the vegetables stirring occasionally until limp but not brown.
Add the stock and bring to the boil. Add the tomato puree and the seasoning to taste and if you want some warmth to it add the chilli. This can be flakes or lazy chilli paste or chopped fresh chilli.
Put the lid on the pan and simmer for approx 20 – 25 mins.
If you like a chunky soup (like me) then don’t blitz it with the blender. If you like a thick but chunky soup then mash some of the veg, if you like a smooth soup then obviously blitz the lot!
Optional – add a chopped up slice of buttered toast for a real hearty body warmer mmmmm delicious!!!
There you have your 5 a day in a bowl all healthy no additives (apart from what’s in the stock cubes)
