Leek and Potato Soup

Ingredients:

  • 2tbs butter
  • ½ tsp garlic (or just use garlic butter)
  • 3 or 4 Leeks (chopped)
  • 4 medium sized potatoes (chopped)
  • medium sized onion (chopped)
  • litre of stock ( 2 or 3 veg or chicken stock cubes are fine )
  • Pepper to taste
  • 10floz milk (optional)

Method:

Clean and chop the leeks and onion.

Put the butter and garlic in a pan on a medium heat and add the chopped leeks and onion.

Stir often and fry for about 10 mins until the veg has gone soft and limp but not brown then add the chopped potatoes.

Stir in the stock, add the pepper and bring to the boil then simmer for 15 mins. if your adding the milk now is the time to do it. Simmer for another 5 mins then set aside to cool.

Blend together.

The soup will keep at least 3 days, more if you haven’t added milk. You can portion and freeze.

Wash leeks

Peel the onion

Chop leeks and onion

Melt the butter & garlic

Prepare the stock

Add chopped potato & stock

Simmer for 15-20 mins

Blitz with a blender

I decided to try this recipe, so had my iPad standing up following your instructions, all was easy to follow, but I did have a couple of mishaps I ended up pouring half the leeks and garlic on the floor as I completely missed the pan, then peeling the spuds I peeled one and it shot out of my hand and bounced across the floor like a bouncing bomb, so with half the leeks and garlic and 1 spud less I thought it would be a disaster.when it has boiled etc and hand blended and I seasoned with pepper it was blooming gorgeous, so I am going to follow your other recipes, hopefully managing to get “all” the ingredients in the pan next time.
