Chicken & mushroom

This is such a tasty soup and a welcome warm up on a cold day. It doesn’t look particularly pretty or appetising but by golly it is delicious and full to the brim of goodness!

Recipe:

  • 2 tbs oil
  • 2 large carrots (chopped)
  • 2 small red onions (chopped)
  • 2-3 cloves of garlic (chopped)
  • 350g of mushrooms (chopped)
  • 3 chicken fillets (diced)
  • 1 litre stock (2 veg + 1 chicken oxo cube)
  • 2 tbs plain flour
  • salt & pepper to taste

Method:

Heat up two tablespoons of oil in your soup pan and add the diced vegetables.

Stir regularly, wilt but don’t brown them. This will take about 10 mins.

Stir in the flour thoroughly and then add the stock. Which is 1 litre of boiling water with 2 vegetable and 1 chicken stock cubes.

Bring to the boil then take off the heat and blitz with a hand blender so that all the vegetables are finely chopped but not pulverised.

Add the diced chicken and bring back to boil, then add the seasoning. Simmer with the lid on for 20 mins. Serve and enjoy!
