My perfect jacket potato

If you want the perfect jacket / baked potato …….look no further! If you want a potato that is crispy on the outside and soft and fluffy on the inside ……look no further and if you want a potato that is as tasty on the inside as it looks on the outside…….then keep on reading  🙂

It is important that you purchase the correct potatoes, only bake the ones that are marked ‘baking potatoes’ because they will not react the same when baked. I use Marfona ones.


  • Baking potatoes
  • sea salt
  • little oil for brushing


Firstly preheat the oven to 180°/FAN 160°/GAS 4

Then scrub your potatoes clean and dry them with a towel. Its good to leave them resting on the towel to dry out completely.

Prick the potatoes with a fork 3 times each side, so 6 times on each one. Then put a couple of teaspoons of sea salt in a dish and roll each potato in it. Just rub gently with your fingers to get a little in the fork holes. The salt will remove the moisture from the potato skin during cooking.

Place the potatoes directly onto the shelf in the oven and bake for approximately 55 minutes.

Remove the shelf with the potatoes on and brush a light coat of oil all around each one. Don’t put too much on, you don’t want it greasy you just want it to slightly crisp. Then put them back in the oven for about 20 minutes. Allow to stand for 10 minutes before eating.

Fill them with whatever you fancy or just a big dollop of butter mmmm

MY TIP ~ why not do a big batch like I do and when completely cold you can individually bag them and freeze them  🙂
