Low carb squares
The ingredients for this low carb snack are very flexible. You can basically add as much or as little of anything depending on your palate. But if you increase say double the spinach make sure you add extra eggs. It doesn’t matter too much if its a few more mushrooms or a bit more cheese. If you want to add more ingredients say chilli peppers if you like spice or red onion for sweetness, that’s fine but don’t combine too many flavours or you will get something that doesn’t taste of anything! You can play around with ingredients until you get something that’s good for you.
But this is a tasty filling snack for anyone who is on a low carb diet
Ingredients:
- 2 tbsp. oil
- 6 cubes frozen spinach
- 6 eggs
- good handful grated mozzarella cheese
- few mushrooms
- 2 rashers smoked bacon
- 2 spring onions
- 1-2 tbsp. double cream (optional)
- salt & pepper
Method:
Preheat the oven to 180° and lightly grease oven proof dish or you can divide this mixture to make individual portions and cook in muffin tins.
Pour the oil in a frying pan and cook the mushrooms for a few minutes until limp and remove from the pan.
Put the frozen spinach in the pan and add half a cup of water and on a low heat to thaw out the spinach. Repeatedly turn the cubes over to evenly thaw, it takes about 10 minutes. You can use fresh spinach by putting in the pan and cooking until just limp if you prefer. Remove and drain well then cover the bottom of your dish.
Chop up the bacon and fry with the spring onions (chopped). Sprinkle these over the spinach. Now add the mozzarella evenly over the top.
Beat the eggs together with the double cream (optional) and season well and pour over the top of the whole mixture. Get a fork and just make its all incorporated then sprinkle the mushrooms over the top.
Put in the oven for approximately 20 minutes or until golden brown.
Allow to cool for a few minutes then cut into squares. 🙂
MY TOP TIP~ cook in a clear oven proof dish so that you can actually see that it is cooked at the bottom as well as the top 🙂
