Toad in the hole

Ingredients:

  • 2tbs oil
  • 8 – 10 sausages
  • 225g plain flour
  • 250ml milk
  • 4 eggs
  • salt & pepper

Method:

Preheat the oven to 220°.

Pour the oil in an ovenproof dish and place the sausages so that they are not touching each other so that they cook evenly. Cook for 10 minutes then turn the oven down to 200° for another 10 minutes. I like to make sure the sausages are cooked through before adding the batter.

Meanwhile, make the batter by putting the flour in a bowl and make a well.

Place the eggs in the well and add half of the milk. Whisk until its nice and smooth and add the salt & pepper. Stir in the rest of the milk.

Take the sausages out of the oven, the oil must be bubbling. Pour the batter over the sausages still ensuring that they are still not touching. Be quick about it, don’t let the oil start to cool, get it back in the oven as quick as possible.

Bake for another 30 to 35 minutes or until well risen and golden brown.

Onion gravy is a  great accompaniment ……mmmm……enjoy!
