Pasta risotto

This recipe has been gratefully received in my inbox and I can’t wait to try it for myself & family. It promises a super economical, filling and tasty meal that is oozing with yumminess…..watch this space for the taste test 🙂
Ingredients: Serves 2-3
- 2 tablespoons Garlic flavoured oil
- 6oz/175g cubed pancetta
- Cup frozen petit pois
- 8oz/225g Orzo pasta
- 2 cups boiling water
- Salt, to taste (optional because pancetta salt in it)
- 1tablespoon soft butter, lurpak, not butter spread
- 2 tablespoons grated Parmesan cheese
- Freshly ground black pepper to taste
Warm oil in heavy pan large enough to hold all ingredients
Add pancetta and cook, stirring until it’s crisp and browned, add peas, cook for about 2 mins until the frosty look leaves them
Add Orzo and turn it about with the pancetta and peas
Add the boiling water
Turn down the heat and simmer for 10 mins, stirring occasionally
(You may need a little more, not much, boiling water if it’s sticking)
When ready, the pasta should be soft and starchy and water absorbed
Beat the butter and parmesan into the pan and adjust the seasoning,
Serve immediately in warm bowls

Just a note to say make your own garlic flavoured oil by leaving a clove of garlic in oil for a short while to infuse – same can be done with chilli oils etc, no need to buy expensive, sunflower/veg oil works – enjoy <3
I'm so chuffed to see this online, it's great to have a platform to find what others are nibbling on and share what you can cook with confidence and hopefully someone will love it for a main meal too
