Nasi goreng
This is my interpretation of the very popular Asian fried rice classic. It’s very tasty and sometimes a welcome change from meat potatoes and veg. Its a quick an easy meal that can be rustled up from regular ingredients from your kitchen.
Ingredients:
- I pack of microwave rice (for ease)
- 4 eggs
- Can of chilli beans
- Chicken breast fillet (diced)
- 2 rashers of smoked bacon (chopped)
- large onion
- punnet of mushrooms
- 2 tbs soy sauce
- 2 hot chillies
- 1 tsp ground cumin
- 1 tsp coriander
- Oil for frying
Method:
Crack the eggs into a smaller pan and fry on a low heat and when the whites have cooked smash the yolks and then chop with the end of your egg slice.
While that’s cooking, put the rice in the microwave and cook as advised (usually 2 minutes) then add the chilli beans and put into a large dish. Then add the cooked eggs
Peel and chop the mushrooms and onion and fry in a large pan until floppy. Set aside until the chicken is cooked.
Put the diced chicken in the pan and cook for 5-6 minutes, while this is cooking cut the rind off the bacon and chop up.
When the chicken is done add the mushrooms, onions and the bacon to the pan and fry for a few minutes.
Add all the contents from the frying pan to the dish and mix everything up well.
Put everything into pan and add the chillies, cumin, coriander and soy sauce and cook for a further 2 – 3 minutes.
Ideally served with prawn crackers!
