Chicken & cheese wrap
Ingredients:
- Chicken fillets ( one per person)
- Smoked bacon ( 2 rashers for each fillet )
- Mozzarella cheese
- Chopped garlic clove
Method:
Slice your chicken fillet without cutting all the way through.
Push the mozzarella cheese ( or you could use any strong cheese) into the slit and wrap the bacon tightly around pulling the fillet together so that when the cheese melts it doesn’t ooze out. If you use any other cheese it does tend to escape the fillet that’s why I prefer mozzarella.
I always use smoked bacon, it tastes so much nicer than ordinary. The chicken seems to absorb the smokiness and it really adds to the flavour.
Finally put into an ovenproof dish and sprinkle with the chopped garlic then cover with foil and put in a preheated oven 180° for 35 minutes and then take the foil off for the last 10 minutes if you prefer crispier bacon.
