Chicken bacon & mushroom pie
This is a very quick and very tasty pie to make if you don’t have much time to prepare a meal. It is absolutely delicious and by adding the condensed soup, you get a beautiful creamy tasty result. You don’t need to add any seasoning at all, it’s all in the soup! You can jiggle the amount of ingredients to suit your own needs. The amount in my recipe will serve 6 good sized adult portions.
Ingredients:
- 3-4 large size chicken breast fillets
- 6 rashers of smoked bacon, chopped
- 2 thinly sliced medium onions
- Punnet of mushrooms, sliced
- 2 tbs oil or butter for frying
- 1 can of chicken condensed soup (my magic ingredient)
- 500g pack of puff pastry for quickness
- 1 beaten egg or a little milk
Method:
Gently fry the chicken in the oil for about 10 mins then add the chopped bacon.
Peel and chop the mushrooms and onions and add them to the pan. Cook for another 5 mins or until they have gone limp but not brown.
Add the magic ingredient, the condensed soup and stir for a couple of minutes on a low heat before pouring it into an ovenproof dish.
Roll out your pastry and completely cover then baste with the beaten egg or milk.
Put into a preheated oven 180° for 25 mins or until the pasty is golden brown. If it doesn’t look as if it has risen enough but it getting too brown just cover loosly with foil and leave it for another 5 – 10 mins.
