Cheese pie
Ingredients:
- Shortcrust pastry ( recipe)
- 10oz strong cheese (grated)
- 1 large onion (finely chopped)
- 1 oz unsalted butter
- 4 oz potatoes peeled, boiled & diced
- 2 large eggs
- 1 beaten egg
- 4 tbsp double cream
- salt & pepper
Method:
Make the pastry and put in the fridge to chill while preparing the filling.
Melt the butter in a pan and gently fry the onions until soft, not brown. Set aside and leave to cool.
Put the cold cooked potatoes into a bowl with the grated cheese, eggs, cream and the onions with a good pinch of salt and pepper and mix thoroughly with your hands.
Divide the pastry ¾ to ¼ for the lid, put this back in the fridge until needed. Roll out the pastry and put into a greased and lined 9″ tin.
Blind bake for 12 minutes (see here for details)
Put the cheese mix onto the cooled pastry evenly and brush the edges of the pastry with the beaten egg. Roll out the pastry that was set aside for the lid and place on top. Pinching the pastry together. Brush the top with the remainder of the egg and bake in a preheated oven 200° For 30 minutes.
