Spicy Apple cake

Ingredients:

  • 6oz butter
  • 6oz dark brown sugar
  • 2 eggs
  • 12oz S.R flour
  • 2 tsp mixed spice
  • 350g eating apples (sliced)
  • 1 oz Demerara sugar
  • cinnamon
  • milk

Method:

Cream the butter and sugar until light and fluffy.

Add the eggs one at a time making sure they are beaten well.

Fold in the flour and mixed spice, cinnamon and then add the sliced apples, saving some for the top.

Add enough milk to make a soft dropping consistancy off a spoon.

Put the mixture into a greases and lined 8″ cake tin, preferably with a loose bottom. Place the remainder of the apples on the top and sprinkle the Demerara sugar over.

Bake in a preheated oven 170° for 1 hr and 15 minutes, checking It’s cooked throughout by sliding a knife into the cake, if it’s clean when extracted, it’s cooked, if it’s wet, leave it for another 15 minutes. If it’s going too dark on the top, put some foil loosely over the cake so it continues to bake without browning.

Allow to stand for 10 minutes before removing from the tin.
